At Uma Garden in Bali, the restaurant marks this moment with Truffle Weekend, a limited three-day dining experience running from 16 to 18 January, dedicated to the understated character of fresh truffles.
Set within Bali’s evolving dining landscape, Uma Garden has become known for its ingredient-driven approach, where seasonal produce guides both flavour and form. Truffle Weekend sits naturally within this philosophy, offering a composed exploration rather than an overt display. The experience reflects a broader movement in Bali’s restaurant scene toward restraint, balance, and a renewed respect for produce at its peak.
Presented as a curated set menu from Amuse-Bouche to dessert, the experience allows fresh truffles to appear with intention across each course. The opening sequence introduces a refined progression of small bites, from Charcoal Rice Crackers to Gnocco Fritto with Beef Mosaics, alongside House Bread paired with truffle butter and pork lardo. Appetizers continue the narrative with measured contrasts, including Hamachi touched with truffle and Cured Picanha layered with charcoal, nori, fruit capers, and black olive brine.
Handmade Raviolone filled with spinach ricotta and omega egg follows, finished with black truffle sauce, before moving into a main course of Australian Striploin MB7. Here, truffle is paired quietly with parsnip purée, confit garlic, and mustard frill, enhancing the dish without dominating it. Dessert closes the journey on a similarly restrained note, with a Millefoglie layered in truffle chantilly cream and chocolate crémeux.
